Chanterelles are world famous not only for their good edibility, but also because they are found in so many countries. In Europe they are found from Scandinavia to the Mediterranean. The rich, fruity aroma (like apricots, many people say) and pleasant texture of cooked chanterelles are among nature’s culinary delights. Many of the world’s great chefs prefer chanterelles to all others (even morels) because of their wonderful flavor and tender, non-crumbly texture. Try it in risotto dishes and omelets.
